Blondie’s Hummus

Ingredients

400g Chickpeas

1/2 lemon juice

1 tsp tahini paste

1/2 garlic clove

1 tsp cumin, freshly ground

1/2 tsp dried chilli flakes

1/2 c oil

Method

Rinse the chickpeas under running water and then put into a food processor.

Dry roast the cumin till fragrant and then grind in a mortar and pestle or spice grinder.

Add the lemon juice, tahini paste, garlic, chilli flakes and cumin to the chickpeas and blitz all the ingredients together.

While the processor is still on, drizzle in the oil in a steady stream. You can add more or less oil depending on the consistency you like.

This recipe can easily be doubled or tripled depending on the amount you need.

  1. My husband just asked me the other day why I don’t make my own hummus… I make everything else! I’ll have to try this recipe so I can add hummus to my homemade repertoire!

    • Aaah, no excuse now :)
      There is a dish I will be putting up where you layer hummus with spiced lamb mince, pomegranate jelly and coriander and you eat it like a dip with torn pieces of flat bread – so good!
