Ingredients
1/4 head of cauliflower, riced – makes 1 cup
1 c rice – I like Jasmine
pinch of salt
Method
Break the cauliflower into florets
Blitz in a food processor till it resembles rice grains
Cook 1 cup of rice with 1 cup of blitzed cauliflower in 3 cups of water, add the salt
Note: the cauliflower cooks just like rice, with the same amount of water
